We're having some good friends over for dinner and we decided to make them lasagna for dinner. I found a recipe that looks good. It calls for 5 different cheeses. Parmesan, Provolone, Mozzarella, Ricotta and Mascarpone. I got to thinking that maybe I could make some of those cheeses today if I can get my hands on all that is needed. I've heard that soft cheeses are a great way to start your cheese making career. After doing some research I found that I had all I needed to make Ricotta and could easily have Tom run to the Beer/Wine making supply store to pick up the one ingredient I needed for the Mascarpone.

Both are currently straining in my fridge, but the flavor of both is fantastic! Very fresh and by far, better than anything you can buy.
I'm usually not a huge fan of ricotta, but this ricotta is different and the texture is closer to cottage cheese because it doesn't have all the additives in it.
The mascarpone is dangerous! So good and creamy.

I think mozzarella is supposed to be pretty easy to make yourself too. I should try it, since I make pizza every Friday night, and the good mozz is kind of pricey. And I've been meaning to make paneer, as well.
I was thinking of making mozzarella, but unfortunately, they are coming for dinner tomorrow and I didn't have enough time to go out and find or order rennet to make it.
